Great summer meal

This is a great meal to use up all the wonderful squash coming from your garden. As a side note everything in this recipe can come from your own garden/farmers market. Very simple meal!!

Summer Squash Quiche

Preheat oven 325

1 Pound summer squash such as zucchini or crookneck, cut into 1/4 inch rounds
1/2 onion chopped
4 eggs, beaten
1 1/2 to 2 cups cheese, grated
1/2 tsp basil
1/2 tsp oregano

Steam squash until tender. Drain and then mash leaving slightly chuncky.

Combine egg mixture and herbs to squash and mix.

Pour mixture into a buttered deep-dish pie pan or other baking dish. Bake uncovered about 30-40 minutes or until knife inserted in center comes out clean.


I had Kirk BBQ up some corn from the Farmers market that was amazing. We just melted some butter, added montreal seasoning (Kirks favorite) and brushed it on the BBQ corn.

Awesome! Thank you. You're like my food guru now! I love the picture of myla with the laundry swaying in the wind in the background...you'd never know you don't live on a farm! Haha.
