(In case you did not guess, this is not my picture)
Tonight's dinner was amazing in two ways. First I cooked meat in our house. I am not a full vegetarian but I do eat meat VERY sparingly. Second because it was so yummy!
Pork with Orange Sauce
4 lg carrots, cut into 1-in. chucks (or baby carrots)
1 Whole pork tenderloin (1 1/4 lbs or I just did pork chops from Trader Joe's)
1 lg navel orange
1 tsp. Extra virgin olive oil
1 sm. red onion sliced
1 tbsp dijon mustard with seeds (yummy)
Precooked brown rice
1.) steam carrots until tender and set aside
2.) If using a tenderloin, cut pork crosswise into 1 1/4 in. thick slices. Press each slice with palm of hand to flatten slightly;
For either tenderloin or pork chops
cover both sides with 1/4 tsp salt and 1/4 tsp fresh ground pepper.
3.) Heat 12 inch skillet on med heat until hot. Add oil, then put pork in single layer. Sprinkle onion in pan around the pork; cook 4 minutes or until pork browns. Turn pork over and stir onion; cook 4 to 5 minutes longer or until pork is done cooking. Transfer onion onto plate, leaving onion on the skillet.
4.) Add mustard, 1/2 tsp orange peel, and squeeze 1/2 cup juice from orange to skillet; cook 1 minute.
5.) Divide pork, carrots, onion, and rice among 4 serving plates and spoon sauce over all.
